Ingredienser
- 1 mellemstor sød kartoffel
- 2 dl. mandelmel (eller mandler du selv maler til mel)
- 2 æg
- 2 store spsk. kakao (ren kakao uden sukker)
- 5 dadler (ikke tørrede)
- 1 tsk. vanille pulver (ikke vanille sukker)
- 2 tsk. ægte kanel
- 1 stor tsk. natron
- saften fra 1/2 citron og lidt revet citronskal (fra økologisk citron)
- lidt havsalt

Sådan gør du
- Tænd ovnen på 180° C. Put bagepapir i eller smør en form der er ca. 20×20 cm.
- Skræl den søde kartoffel og skær den i små stykker. Put stykkerne i en foodprocessor og kør så kartofflen bliver til purré. Du kan evt. dampe den søde kartoffel lidt først.
- Mix alle de andre ingredienser sammen i foodprocesseren, det skal mixes godt sammen
- Smør dejen ud i formen og sæt det i ovnen i ca. 20-25 minutter. Du kan tjekke om kagen er færdig ved at stikke i den med en gaffel, strikkepind eller lign. hvis den kommer ren ud er kagen færdig.
